Manic Monday and Daydreamin’ of French Toast

As another manic Monday comes to an end, I can’t help but reminisce on my lovely Saturday morning.  Taking some time read “When Helping Hurts” as a prep for Uganda as well as devour enjoy a breakfast favorite of mine…FRENCH TOAST! But not any ordinary french toast, PB&Banana stuffed french toast! Que the trumpets!

PB&Banana Stuffed French Toast:

Ingredients:
1 whole egg/1 egg white
splash of milk (I used almond milk)
2-4 slices of bread (Ezekial sprouted for me!)
1 tsp cinnamon
1 tsp vanilla
1/2 banana, sliced
dollop of peanut butter

Super simple: Whisk eggs/cinnamon/vanilla/milk in bowl. Dip bread in batter (make sure it gets a good soakin’). With stove heat on med-high, place bread slices separately in skillet, allow to cook for 2-3 minutes on each side. While bread is cooking, cook sliced banana slices on skillet for around 1 minute (they cook quickly!) Remove one piece of bread from skillet and add a layer of PB and banana slices. Return to heat and cover with second slice of bread and let heat together for another minute.

Serve with syrup (I used agave nectar) and indulge! Oh how I love making typically unhealthy foods, wholesome and healthy 🙂

Back to the reality of Monday…I cranked through the day, ready to take on the gym tonight. I joined my running bud and great friend Jamie @ her super fancy (and awesome) gym in Aliso Viejo, The Renissance Sports Club, yesterday afternoon and it was quite motivating. Her and I trained and ran our last marathon together so it was great to be burning calories side by side again! She is way better at weight training than me so I enjoyed grabbing some pointers from her.

I have never been good at staying committed to weight training, especially while training for races.  Since her and I are running the Chicago Marathon together in October and want to beat our PR’s, cross/weight training is a must.  I gotta admit, this down time not being able to run has gotten me kinda diggin’ the weights (maybe because I have no other option?!), either way, its a good thing!
I worked on arms and abs today and since I’m feeling a bit like jello, its foam roller sesh and getting some rest for this gal.
